Lesley and Peter Fay


Meet Peter and Lesley Fay, a husband and wife team boasting a track record of restaurant, wine and food-related successes of which Graham's is the piece de resistance. The Fays are as at home in their own restaurant as our diners are– Peter in the role of helpful host, and Lesley, turning out delectable appetizers, entrees and desserts in Graham's open kitchen.

Arriving in Taos nine years ago by way of Sonoma, CA, the Fays were ready for a new adventure, bringing to bear their many years of experience in food and wine-related pursuits, and a heritage that runs long and deep.

Lesley, who calls herself a "southern California beach girl" grew up on a farm in a family of seven, and early on was energetically cooking, sewing, and pursuing an interest in home décor. The configuration of the restaurant space is a collaborative effort–Lesley created the welcoming interior design, and Peter the graphics and logos that embody the Graham's ambiance.

Never one to sit still for long, Lesley fled from office work to cooking–cooking with the flair, creativity and love that goes into every dish turned out at Graham's. She apprenticed at Sonoma Chef 's, went on to the California Culinary Institute in San Francisco where she eventually met Peter, and with the ink still wet on her diploma was immediately hired as a Pastry Chef for the popular Bistro Don Giovanni in Napa.

Remember when business was all about customer service? Peter Fay remembers. A third generation San Franciscan, Peter trained as a merchant, and brings to the profession the same flair and creativity as his wife does to the culinary arts. He honed his skills working in a family business in San Francisco–an au courant men's and boy's clothing store called Young Man's Fancy that was a fixture in the area for 40 years. Widely respected as a sales and marketing whiz, Peter earned a degree in Economics at the University of Oregon, and added valuable world experience to his repertoire of skills with service as a naval officer in Vietnam. His day job is Real Estate Broker, with a reputation of trust and professionalism.

The Fays, Californians to the bone, have embraced the unique, high-desert southwest town that is Taos with enthusiasm and engagement. Graham's Grill by Lesley B. Fay is a dynamic supporter of community organizations ranging from Stray Hearts Animal Shelter to the Millicent Rogers Museum, the Harwood Museum and a variety of locals schools and churches.

Peter and Lesley, and their staff of talented cooks, friendly servers, enthusiastic bussers and energetic dishwashers, graciously invite you to join the Graham's Grille family of friends.
