Arriving in Taos nine years ago by way of Sonoma, CA, the Fays
were ready for a new adventure, bringing to bear their many years
of experience in food and wine-related pursuits, and a heritage that
runs long and deep.
Lesley has created private label food lines for many of Sonoma and
Napa's famous wineries, including Kunde, Benziger, Sabastiani and
Landmark. And together, the Fays worked in winery-related business
for more than 12 years–Peter drawing on a family tradition that included
cousin Nathan Fay of the legendary Stag's Leap and Fay Vineyards.
An icon in the Napa Valley, Nathan Fay brought the first
cabernet grapes into the Napa Stags Leap region back in 1954,
and unselfishly helped other growers develop premium wine
grapes. The University of California at Davis offers a viticulture
scholarship in his name for young, upcoming wine makers.
Nathan's influence on Peter and Lesley can't be overstated. He
was a frequent diner at the couple's Fay's Garden Court Café in Glen
Ellen, CA, and a regular visitor to the Fay's own vineyard in the
Carneros region where they grew Pinot grapes. His close counsel
over the years is reflected in the extensive and fascinating selection
of Graham's Grille wines, meticulously chosen to complement the

NV Roederer Estate Brut Anderson Valley, California An excellent French style California bubbly from the great Champagne house of Roederer (Cristal). Bonny Doon Vin Gris De Cigare’ 2008 California A consistently excellent Rose from the charismatic Randall Graham. Delicious framboise, strawberry, cherry and watermelon aromas, followed by a crisp and fresh fruity rose' finish. Great over lunch with a wide variety of dishes. (RP 88) 33
Pedroncelli Dry Creek Valley Rose 2007 *New* Sonoma, California Made from Zinfandel grapes by at Pedroncelli, an old Sonoma family winery. Lush, crisp and dry, with fresh raspberry and spicy vanilla flavors. An ideal aperitif wine. At the top of the tier for light Zinfandels. (WS 87) 34
Beringer White Zinfandel 2008 California This widely recognizable White Zinfandel is consistently a top seller. Its color which comes from the short amount of time that it spends in contact with the Red Zinfandel grape, and its citrus, berry and melon flavors and aromas are sure please! 21

Saint Clair Vicar's Choice Sauvignon Blanc 2007 Marlborough, New Zealand A Sauvignon Blanc from Saint Clair, one of Marlborough's key producers since the late 1970s. Calera Central Coast Chardonnay 2008 *New* Central Coast, California Lean and a tiny bit sour, with pippin apple, sliced pear, apple pie and hints of nectarine. This Chardonnay gains complexity and nuance on the finish, ending with a creamy nutmeg scent. The 2007 Chardonnay Calera Central Coast reveals notes of honeysuckle, orange blossom, and white peaches, medium body, and fine depth as well as purity. This is a vintage for Calera that should age beautifully for 15 or more years, given the winery’s history of its top vintages aging brilliantly. (RP 90/WS 88) 31

Landmark Overlook Chardonnay 2007 California This very impressive Chardonnay from one of California's premier producers is made from a blend of grapes grown in Sonoma, Santa Barbara, and Monterey County. Ripe, smooth and creamy, with layers of pear and vanilla flavors. Medium bodied, deep, complex and concentrated. (RP 90 / WS 92) 50
Luca Chardonnay 2007 *New* Uco Valley, Mendoza, Argentina This is one of the three Luca Catena wines on our Graham’s list. Soft, with melon, fig and pear tart notes gliding over a buttery frame. There's a lingering hint of toasted hazelnut on the rich finish. With a classy, pleasing style, this Chardonnay has arguably been one of the 3-4 best produced in Argentina for a number of years. 100% barrel-fermented with full malolactic fermentation, and aged for 12 months in 50% new French oak. Light gold-colored, with an outstanding bouquet of spiced apple and poached pear, and tropical fruits in the background. Medium to full-bodied, mineral and oak notes emerge on the palate accompanied by lively acidity, layered flavors, and excellent balance. (RP 92/WS 88) 54

Paco & Lola Albarino 2007 *New* Rias Biaxas, Spain If you have ever spent a significant amount of time in Hawaii, we’re bet that some of you might do a double take when you read this name the second time!! Paco & Lola is a lively and refreshing white wine made 100% with the native Spanish grape variety, Albariño. This varietal boasts a brilliant yellow straw color, with a highly diverse floral base aroma. Fine notes of fruit such as citrus and green apples and touches of herbs such as basil. Allegrini Palazzo Della Torre 2005 Veneto, Italy From Allegrini in Veneto Italy, Palazzo Della Torre is a polished wine, loaded with layers of delicious fruit, complex aromas, and with mouth filling flavor. Guigal Cotes du Rhone 2003 Southern Rhone, France A classic Cotes du Rhone from Marcel Guigal who is widely recognized as one of the World's great wine makers and Houses. Dark ruby, medium bodied, with plenty of red and blackberry fruit, crushed plum, pepper and spice aromas and flavors. This wine compliments just about everything on the Graham's Grille menu! Peter Lehman Shiraz Barossa 2006 *New* Australia 2009 Wine Spectator Top 100 Ripe and round, and purple colored, this 100% varietal is generous with smoky cherry and black currant flavors that persist against mildly grippy tannins with a long, layered finish. Rosenblum Cellars Syrah Vintner’s Cuvee 2007 *New* California This Syrah from Rosenblum, one of California’s most famous wineries, offers an elegant mix of ripe, juicy, grapey wild berry, spice, mineral, loamy earth and sage notes that are complex, focused, balanced and complete. Jaffurs Wine Cellars Syrah Santa Barbara 2008 *New* Santa Barbara, Central Coast, California This is our third entry from Jaffurs Cellars, and another limited production wine. The Santa Barbara Syrah is an absolutely beautiful, lush and sexy effort. Scents of burning embers, blackberries and cassis. Succulent with pure fruit, medium to full body with a vital, young, long and persistent finish. (RP 92/WS 92) 57
Domaine Alain Graillot Crozes-Hermitage 2007 *New* Northern Rhone, France Another classic Northern Rhone wine from Alain Graillot. Densely packed, with briar, tapenade, Maduro tobacco, bittersweet cocoa and crushed blackberry fruit all weaving around muscular tannins. Tangy, mineral-filled finish has latent length. (WS 91) 57
Justin Syrah 2007 Paso Robles, California We are big fans of Justin wines which originate from California's Central Coast, near Paso Robles and San Luis Obispo. This Syrah is medium bodied and fleshy, and exhibits a smoky, earthy, dried blackberry fruit character. This would be a wonderful wine to drink with a high-class Graham's Grille burger! Jaffurs Wine Cellars Petite Syrah 2007 *New* Santa Barbara County, California Another stellar offering from Jaffurs. A young wine with great concentration in a ripe core of blackberry and huckleberry, with vivid white pepper highlights and powerful tannins. Amazing richness and power from an American wine that rivals the most robust offerings from the Northern Rhone in France. (RP 93/WS 91) 62
Tablas Creek Esprit D' Beaucastel 2006 Paso Robles, California 2009 Wine Spectator Top 100 Tablas Creek is a joint venture between American Robert Haas, and the Perrin family, owners of Chateau de Beaucastel in the Southern Rhone region. The clippings for these Tablas grapes came from Beaucastel, hence the name Esprit ('Spirit') de Beaucastel. These are superb, sophisticated, and elegant and full bodied wines. The quality of these Central Coast cousins are rapidly approaching the standard of the superb Chateauneuf du Pape made at the sister winery in France. (RP 92/WS 93) 64
Domaine Alain Graillot Saint-Joseph 2007 *New* Northern Rhone, France Really alluring, with incense and mulled spice notes up front, followed by a delicious core of crushed plum, blackberry and cherry fruit. The long finish is framed by a mouthwatering iron note. A very strong showing for this wine from Alain Graillot, one of the Northern Rhone superstar wine makers. (WS 92) 66

Jaffurs Wine Cellars Syrah Thompson Vineyards 2007 *New* Santa Barbara, Central Coast, California This is a sensational, rustic and earthy, dense-purple, highly concentrated wine. Distinctive and potent, followed by a big sweet kiss of melted tar, tobacco leaf, chocolate, pepper, blackberry and cassis. From Jaffurs, a Superstar California winery. A wow! Wine. (RP 93/WS 91) 69
Chateau de Saint-Cosme Gigondas 2006 *New* Southern Rhone, France 2008 Wine Spectator Top 100 Packed with raspberry ganache, bittersweet cocoa, loam and briar notes, all pushed by a dark, muscular finish. Tangy minerality is buried deep on the finish. This 2006 Gigondas is 70% Grenache, 20% Syrah, and 10% Mourvedre and Cinsault It exhibits sweet blackberry, cherry, licorice, smoked herb, and scorched earth-like aromas as well as a rich, round, generous, concentrated, complex style with no hard edges. Louis Barruol’s 2006 Chateau Saint-Cosme is a brilliant example of terrific terroirs and impeccable winemaking. (WS 92/RP 91) 73
Guigal Chateauneuf Du Pape 2003 Ampuis, France A classic and famous Chateauneuf du Pape from Marcel Guigal and his son Philippe's winery in Ampuis, in France's Rhone Valley. Deep ruby and purple in color, full-bodied and tasty a sweet nose and long finish on the palate. Great wine with hearty dishes on a cold fall or winter's night. At its peak right now! (RP 90) 77
Saint-Cosme Chateauneuf du Pape 2005 *New* Southern Rhone, France One of the very best wines we have on our excellent list. This 2005 Chateauneuf du Pape is superb, a blend of 50% old vine Mourvedre and the rest Grenache, aged in old used small barrels. The wine has a dense purple color and a full bodied style with plenty of tannin and sweet roasted meat smells intermixed with blackberry, licorice, incense, and forest floor. Broad, dense with a chewy style, and a mix of red and black plum, fig and blackberry fruit laced with dark cocoa, beef, and black licorice. The long, muscular finish has a tarry edge. Row Eleven 3 Vinas 2007 Sonoma, Pinot Noir This is a relatively new, reasonably priced and excellent California Pinot Noir entry from Sonoma that we like a great deal. Beaux Freres Pinot Noir Willamette Valley 2007 *New* Willamette Valley, Oregon Available in April Beaux Freres is a very interesting story. This is a superb maker of a number of outstanding Oregon Pinot Noirs, made in the Cote du Beaune style. An interesting fact is that one of the winery’s owners is Robert Parker. Parker, as a matter of policy, does not conduct any tastings to rate the wines for his publication as he believes it would be a conflict that would affect his credibility. However, Wine Spectator does. This 2007 is silky and inviting, with a gossamer texture which lets the delicate blueberry, cherry and nutmeg flavors slip easily into a long and enticing finish. Vivac Syrah 2007 Dixon, NM Most visitors to the area passed Vivac 25 miles South of Taos on the road up the valley to Graham's Grill! This fairly new winery uses 100% New Mexico grapes, and is the 'pride and joy' project of Jesse and Chris Padberg, two brothers who are continuing their training at the world's best oenology school, U. Cal. Davis. This is wine made in the classical Northern Rhone style, with herbal and spice hints, dark blackberry fruit, bright acidity and easy tannins. As with all Syrahs, best enjoyed with any hearty meat dish, pastas, or a burger. 33 La Chiripada Rio Embudo Red Reserve Selection 2008 Dixon, NM Another star local winery, La Chiripada is in the Rio Embudo Valley just off the highway in Dixon on the way to Taos. Michael and Patrick Johnson have received numerous past awards as 'the best winery in New Mexico'. La Chiripada's Rio Embudo Red Reserve is one of their signature wines, and is a blend of Leon Millot, Marechal Foch, Ruby Cabernet and Nebbiolo grapes. Bouquet hints of cherries and plums, strong mid-pallet, with a lingering, smooth aftertaste.
